Makes 2 cups

  • 6 coriander roots, washed
  • Whole bunch of coriander
  • 6 long green chillies (deseed if you don't like it hot)
  • 60g of palm sugar
  • 4 garlic cloves
  • Pinch of salt to taste
  • 150mL of lime juice
  • 50mL of fish sauce, or to taste

Blend all ingredients in food processor or blender until combined. Adjust sweetness with palm sugar, heat with chilli, salt with fish sauce and sour with lime juice if necessary.

Green nahm jim is great as a dipping sauce for fish, calamari, prawns and with oysters. It's also great as a salad dressing or with chicken.
